FARMING: Organic, biodynamic

WINEMAKING: Following the harvest, carried out strictly by hand, the bunches are transferred to the cellar where they are carefully selected and then destemmed manually on special racks . The resulting alcoholic fermentation takes place completely spontaneously thanks to indigenous yeasts in stainless steel tanks, the same type of wine containers where the maturation phase of approximately 12 months takes place which precedes the final bottling, carried out without prior filtration or clarification.
