FARMING: Organic / Biodynamic (uncertified), Unfiltered, no added sulphites
WINEMAKING: Intensive vineyard sorting and de-stemming. The most yellow and ripest grapes macerate for 1 - 2 weeks, the rest are pressed directly. The musts are then combined mid fermentation, in stainless steel. The wine remains on lees without stirring until spring time, when bottling takes place.
