WINEMAKING: 24 hour maceration to get a light blush (aka "Ramato" style). The ferment is done in steel tanks and neutral oak with aging mostly being done in large oak foudres but 25% is in old acacia barrels, a wood used for increased aromatics. The wine is not filtered nor fined, no additions save a small sulfur dosage.
