Wine Making: Direct press and cold racking of the gross lees for 18 - 24 hours. Fermented in stainless steel tanks and concrete vats. Aged in stainless steel and fiberglass vats on the lees. After malolactic fermentation, a racking is done and 1 gram of SO2 is added per hectoliter. Finally, there is a light earth filtration and 1 - 1.5 grams of SO2 per hectoliter added at bottling.
