FARMING: Practicing organic

SOIL: Weathered red loam, gravel, quartzite

VINES: 17-32 years

WINEMAKING: Hand harvest off of steep slopes. No chemicals in the vineyard. Macerated for 12 hours. Natural fermentation in 2500L stainless steel tanks. Bottled with about 12g/l of residual sugar. Second fermentation in the bottle at about 20 degrees Celsius for 3 weeks.
