SOIL: limestone

WINEMAKING: Harvested by hand, 13 hour maceration on skins before pressing, fermentation in concrete with indigenous yeasts. No fining or filtration. Minimal added sulfur. Aged for 6 months in concrete and 3 months in bottle.
