AGE OF VINES: 35+ years old
SOIL: Gravely clay-limestone on marl soils
WINEMAKING: These then spend 45 days fermenting (spontaneous; ambient yeast) on the skins in 500 liter earthenware amphora. The wine spends a total of 12 months on it's lees before bottling in August 2021.
