FARMING: Organic, biodynamic, unfined, unfiltered, no added sulphites

WINEMAKING: 75% whole bunch pressed and 25% 5-day maceration on skins. 100% old barrel and puncheon ageing for 11 months then conditioned in bottle for a further 6 months.
