WINEMAKING: Four weeks of maceration on the skins with two remontages a day. After a racking, aged on the lees 25 and 50hl botti for 24 months. Unfined / Unfiltered. Nibiô is local dialect for this unique strain of Dolcetto characterized by its red stems. It used to be the primary grape of the area but was largely wiped out by phylloxera.
