WINEMAKING: Whole clusters are moved into an open top fermenter and macerated for 12-15 days with gentle pump-overs. After pressing the free-run, presses are blended before being racked into older barrels where they age until bottling. Spontaneous fermentation with autochtonous yeasts, bottled without fining, filtration or added sulfites.
