TERROIR: This wine comes from a single, one hectare parcel of the same name. They are located in the Foucault home property within the village of Chacé.
AGE OF VINES: The vines are very old here, 75 to 95.
FARMING: Organic
WINEMAKING: Grapes are destemmed then macerate for five weeks with submerged cap and pump-overs before continuing fermentation and aging in barrel with no additions of S02 until bottling. The wine typically sees a 18-24 month élevage in 100% new oak, though 30 months has happened in powerful vintages. Le Bourg is vinified in 100% new oak from a tonnelier who only produces 250 barrels a year. Rougeard buys 50 of those each year to produce Le Bourg.
