WINEMAKING: Right before the harvest, fruits sorted several times in the vineyard to remove diseased berries. So we were able to delay the harvest in the season and we were able to harvest grapes that were close to full ripeness. After destemming, only the berries were placed into open-top stainless steel tanks for 30 days maceration with punching down four times a day. After pressing with a balloon press, the wine was aged in barrels for approximately 8 months. The wine is bottled without adding sulfites.
