VARIETAL: Pinot Noir

FARMING: Sustainable

SOIL: Shallow silt loam over fractured shale

WINEMAKING: Grapes were crushed and destemmed into a one ton bin to macerate for 24 hours before pressing. Settled juice was moved to old French oak barrels where fermentation, including full malolactic, continued until August of 2022. In September of 2022 the wine was racked, sugar was added and it was bottled by hand without fining or filtration under crown cap. A second fermentation occurred in the bottle producing a dry, sparkling wine. Unfined and Unfiltered.
