TERROIR: From threenorth-facingparcels of centenarian vines in the La Corujeraarea, ranging from 350-650m above sea level. The vines are planted on sandandclaysoilsover red basalt bedrock. WINEMAKING: The three parcels were harvestedand fermentedseparately.½of grapesfrom the lowest parcelwentthrough carbonic maceration in open-top fermenters,while½were destemmedthen maceratedand fermentedin open-top fermentersfor 14 days. Grapes from the other two parcels were partially (25%) destemmed, then fermented in concrete tanks without temperaturecontrol for 18 days.The wines wereblended and rested for 8 months on their lees in 228L neutral French oak barrels, where malolactic fermentation completednaturally. Bottled unfined, unfiltered, with a small addition of sulfur.
