Winemaking : Grapes are left to air-dry on racks until December and sometimes even up to January-February the following year. After pressing the must is transferred to sealed 100L casks (caratelli) along with a little bit of the "mother." Seven years in the vinsantaia loft-area in small casks, with the "mother" (thick substance remaining from previous vintages), then 12 months in bottle.
