WINE MAKING: The wine sits on the skins for about 3 weeks after which the grapes are pressed. The wine then stays in barrel for 18 months in used 225, 300, and 500-liter wooden barrels (mostly oak with a very small percentage of acacia). There is zero sulfur added, the wine is not filtered or fined, and nothing is added at all.
