WINEMAKING: 100% Sauvignon Blanc from Yamanashi. 12 hours skin contact. Fermented in amphora. Aged in amphora for 2 months, then racked it and aged in stainless steel vat for 7 months. Batonnage once every 2 weeks until bottled.
