DISTILLING: We started out by brewing wintergreen leaves, birch bark, mace and star anise in hot water. We quickly crashed the temperature 20 or so degrees and added a little grape juice and sugar. A quick fermentation on the botanicals and we strained the spent botanicals out and added the Good Liquor Works coffee fruit syrup. We then filtered this final liquid and bottled it. These bottles sat on the cool distillery floor for about two weeks during which the sugars from the coffee fruit fermented, releasing CO2 and carbonating the bottle. A process the brewing community refers to as bottle conditioning.
