SOIL: Loess, clay, sand – blend of different vineyards in Bílovice and Moravský Žižkov, aged from 5 to 40 years. Estate-owned, organic.
WINEMAKING: The grapes are hand-picked, gently destemmed and then fermented mostly as whole berries, without stomping and with only gentle punch-downs, 5 – 7 days depending on the variety. All this in order to get only a gentle extraction, to make this wine as palatable and drinkable as possible. Aged for ~ 11 months half in old oak, half in stainless steel tank, then bottled unfined, unfiltered, unsulfured.
