WINEMAKING: After a gentle press, fermentation takes place in stainless steel with wild yeasts. Secondary fermentation takes place in bottle.10 day carbonic with no added SO2, red-fruits (sour cherry/black currant), super fresh with fine bubbles. Unfined, unfiltered.

ABV: 9.5%
