WINEMAKING: Pressing of whole bunches with a light debourbage, after which all is placed in barrels immediately. Alcoholic fermentation with indigenous yeasts and malolactic in barrels. On the lees, so-called “reduction” aging in barrels without racking. Riddling without SO2 for 5 months. “Prise de mousse” or foam creation from February 2019 on slats in bottles (traditional method).
