FARMING: Organic, Biodynamic
WINEMAKING: From 6 plots of low-yielding, biodynamically farmed estate vines on flinty, sandy clay soils in the Coteaux de Loir. The hand-harvested bunches are pressed whole and ferment spontaneously, undergoing carbonic maceration for several months before pressing and aging in used barrels. This is the first time that two vintages have been blended: Gamay does not always ripen well this far north, so Bellivière combined their two very small crops of it in 2019 & 2020.
