WINEMAKING: A late grape variety, it is harvested and sorted manually at the end of the harvest when it is at its peak of maturity. At least 6 years in three quarter filled oak barrels without any topping up so that nothing disturbs the thin surface film, a veil of live yeasts, responsible for the yellow colour of the wine.
