WINEMAKING :  Grapes hand-harvested, hand-destemmed, hand-crushed, fermented with spontaneous yeast and aged 18-24 months in glass-lined cement tanks. The wines are bottled unfined and unfiltered and are aged in their cellar in bottles for continued development.
