WINEMAKING: Grapes were foot crushed whole cluster into a one ton bins with one-hundred per cent stem inclusion and let to ferment with once daily punchdowns. After twelve days the grapes were pressed and settled juice was moved to old French oak barrels to complete fermentation, including full malolactic, which finished in August of 2023. In September of 2023 the barrels were emptied into a single tank to age an additional eight months. In June of 2024 the wine was racked off its lees and bottled without fining or filtration.
