FARMING: Organic

SOIL:  limestone, dolomite

AGE OF VINES: 30 years

WINEMAKING: A portion of the grapes are given a quick 6 hour maceration, and the rest are macerated for 3 days. Fermented and aged in old oak. Unfined, unfiltered with a touch of SO2 at bottling. 

ABV: 13.8%
