WINEMAKING: Grapes macerated on skins for 2–4 days and spontaneously fermented. Aged 10 months in stainless steel. No fining or filtration, with only 10 mg/L of added SO₂. The steep schist slopes (400–550 m) lend intense minerality and freshness.
