WINEMAKING: Grapes are hand-harvested and soak for 24 hours before being pressed into stainless steel tanks, where they ferment with indigenous yeast at ambient temperatures. Aged for 12 months on gross lees in extra large 1500L Georgian acacia barrels, untopped. Unfined, unfiltered, with no added sulphur.
