FARMING: Organic, biodynamic

SOIL: 500m above sea level

VINES: 40 years

WINEMAKING: Fermented with indigenous yeasts and aged for 10 months in old oak barrels. Bottled without added sulphites. Grapes undergo a wild fermentation with only a few hours of skin contact. Once pressed, the wine is aged for one year in different sized old barrels, followed by a few additional months in the bottle.
